- 1 tablespoon peanut oil
- 700g coles australian gravy beef cut into 3cm pieces
- 1 3 cup 100g yellow curry paste
- 1 brown onion chopped
- 400ml can coconut milk
- 1 cup 250ml beef stock
- 1 large sweet potato peeled chopped
- 300g cauliflower cut into florets
- 100g green beans trimmed cut into 3cm lengths
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon lime juice
- steamed jasmine rice to serve
- 1 4 cup coriander leaves to serve
- lime halves to serve
The Instruction of sweet potato and beef yellow curry
- heat oil in large saucepan over medium high heat cook beef for 5 mins or until browned all over add curry paste and onion cook stirring for 2 mins or until fragrant add coconut milk and stock bring to the boil reduce heat to low cover and simmer for 1 1 2 hours or until beef is tender
- add sweet potato cook for 20 mins or until sweet potato is almost tender add cauliflower beans fish sauce sugar and lime juice cook for 7 mins or until heated through and vegetables are tender
- serve curry with rice coriander and lime halves
