- 3 2kg size 32 frozen turkey buffe thawed
- 2 lemons quartered
- 8 sprigs fresh thyme
- 40g butter softened
- gravy to serve
- 520g loaf sourdough cut into 2cm cubes
- 200g streaky bacon chopped
- 200g danish fetta crumbled
- 1 1 2 cups grated cheddar
- 2 green onions chopped
- 2 tablespoons chopped fresh oregano
- 50g butter melted
- 1 4 cup extra virgin olive oil
- 2 garlic cloves crushed
- 2 teaspoons chopped fresh thyme leaves
- 1 4 cup roughly chopped fresh flat leaf parsley leaves

- preheat oven to 180c 160c fan forced place turkey on a greased wire rack in a large flameproof roasting pan pour 2 cups water into pan fill cavity of turkey with lemon and thyme
- rub butter all over turkey season with salt and pepper cover pan tightly with lightly greased foil roast for 1 hour 30 minutes
- remove and discard foil roast basting with pan juices every 20 minutes for a further 1 hour or until turkey is golden and juices run clear when thickest part is pierced with a skewer add more water to pan if evaporating during cooking carefully transfer turkey to a plate cover loosely with foil set aside to rest
