- pat thawed cherries dry with a paper towel place in a saucepan with the vanilla and the powdered sugar place over medium heat cook for 2 minutes or until sugar dissolves reduce heat to low cook for 5 minutes stirring occasionally or until the mixture thickens slightly add the lemon juice and the kirsch if using cook for a further 2 minutes reserve 2 tablespoons of the cherry mixture in a small bowl put the rest of the cherry mixture in the refrigerator for 1 hour or until the mixture thickens
- place the cream and reserved cherry mixture in a small saucepan over medium heat bring just to a boil remove from the heat add the chocolate set aside without stirring for 5 minutes or until the chocolate is melted stir until well combined pass through a fine sieve into a bowl discard the solids set aside for 20 minutes to cool completely
- place the sponge cakes on a clean work surface use a 6cm diameter round pastry cutter to cut 12 discs of cake
- place 6 cake disc on a serving plate spoon over the chilled cherry mixture garnish with the remaining 6 cake disks and press gently pour over the chocolate mixture allowing it to drip down the sides set aside for 10 minutes or until set
